Bikini Recipe

Yields 10 people

For the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Syrup: Place all the components into a pot, heat until it reaches a gentle boil, agitating to dissolve. Next, take off the heat and leave to cool entirely. Transfer to a sealable bottle, cap it and store in the fridge, where it will keep for up to a month.

Preparing the Premix: Pour every spirits and syrup into one large bottle, let it rest for an hour, then filter it best through muslin, making it perfectly clear.

For serving: Add 85ml of your batch mix to a cocktail shaker filled with ice, gently stirring gently for a minute until cold. Filter into a frosted cocktail glass or similar, top with some cranberries and finish by giving it a quick spritz of the essential oil over the top.
